Creating Coconut Wine
There’s a project on the way which seeks to manufacture and market an “iconic” wine from coconuts.
We already have lambanog, which is not exactly fine wine. What this new government project is aiming for is a world-class wine that will be identified with the Philippines, in the same way that sake is with Japan.
The project is headed by the Philippine Coconut Authority and local wine maker Marius Diaz. Diaz, who has studied wine-making in France, has 1 year to develop the technology needed to produce export-quality “Nilak”.
Vodka is from potatoes. Sake is from rice. There is no reason why wine cannot be made from coconuts. Who knows, “Nilak” could very well put the Philippines on the map for exotic wines.

The project should be assigned to professionals or companies who’s got expertise in wine or beverage manufacturing. Hindi lang kase nakapag aral ng “wine making”, must be a chemist or chemical engineer. Marami naman dito sa Pilipinas ang mga yan the likes of chemists and engineers from beverage manufacturing companies and the various Universities.
For info., the term “wine” is assigned to an alcoholic drink derived from grapes…
