There’s more than one way to cook menudo
Since my daughter has multiple allergies to milk, eggs and nuts (which are mostly found in American dishes), I have taken to cooking allergy-free food, and most Filipino dishes are, thankfully. One of her favorites is menudo, and she would eat that daily if I let her. My hubby and I, well, we’re getting tired of it. So I thought of asking Filipina Soul readers (that’s you!) of your version of menudo and maybe I can give my cooking a fresh taste.
Here is how I cook my version -
1. Boil cubed pork in little amount of water until almost tender. Separate broth and fry pork in little oil.
2. set pork to one side of pan and saute garlic, onion and tomato (one at a time to let the flavor seep). Saute with pork and add a little soy sauce. Saute some more.
3. Add pork broth and tomato sauce. Let boil.
4. Add cubed potatoes and carrots. When vegetables are tender, add raisins. Salt and pepper to taste.
There you go. That’s my menudo. I know there’s also a mexican menudo but I’m not sure if that tastes the same as ours, or if it’s cooked the same way. Now, I would love to hear your version…
